When you start to simmer the first part, add three egg yolks and a pinch of salt to a blender. Blend for a few seconds. Then pour the first part from the saucepan into the blender and blend for 30 seconds.
Continue by melting two sticks of butter in the microwave and pour into the blender while the blender is still on. Blend for an additional 30 seconds. Then add two tablespoons of the tarragon and blend until mixed (1-2 seconds).
