Snapper with Fresh Ginger Butter

Snapper is a wonderful saltwater fish. I had just been out on a trip and had brought home pounds of snapper fillets. Being on vacation really made me appreciate fresh ingredients and the great aromas of cooking and being outside in a warm climate. So, I made a fun ginger butter and fried the Snapper in it.

To make snapper with Fresh Ginger Butter, you will need the following ingredients:

  • 4 Snapper Fillets
  • 1/2 minced and seeded jalapeƱo pepper
  • 3 tablespoons of softened butter
  • 3 teaspoons of minced fresh ginger
  • 1/2 a bunch of cilantro chopped
  • 1/2 of a lime juiced and
  • 1/2 lime rind

Start by softening the butter and adding the jalapeno, ginger, cilantro, and lime. Mix in a bowl until well mixed.

In a non-stick pan, take some of the butter mixture and melt it. When it is melted, make sure to coat the bottom of the pan. When the pan is hot, lay the fillets on the pan and cook for three minutes on medium high heat. Flip the fish and add some more of the butter so that just under 1/2 is left. Both sides should be golden brown and the heat will release all the flavors and aroma of the cilantro and ginger.

We also made some asparagus and a sweet potato for sides. When you serve the fish, add a dollop of the unused butter to the top of the fish. It was also very good on the sweet potato.
