I love cucumbers. Even though there are literally hundreds of varieties, they can be divided into two groups: pickling and slicing. California and Florida provide most of the slicing cucumbers in the US.

The Slicing variety tend to be larger and more thick skinned which makes them easier to transport without damage. Cucumbers are quite versatile and as you will see in the  slideshow they can be the backbone of great recipes. Not only do cucumbers have a fresh taste but offer some great health benefits such as antioxidant and anti-inflammatory properties which have been well documented.
