Harvest Time and Cucumber Recipe

My two little grandsons proudly brought me their armfuls of cucumbers and carrots from the vegie garden. They loved searching the vines that were bigger than themselves for the bright yellow and green cucumbers.

These are seeds from Seed Savers Exchange  in Decorah, Iowa.  The three kinds of cucumbers in the photo above include the True Lemon, Miniature White and Parisian Pickling.

Cucumber Salad Recipe

Serves: 6
A sweet, salty and sour crunch of cucumbers to compliment anything on the grill.
Ingredients
  • 4-5cucumbers
  • 1 small red onion
  • 2T salt
  • 4T sugar
  • 6T rice vinegar
  • fresh dill
Instructions
  1. Slice your fresh cucumbers and red onion into a bowl.
  2. Sprinkle with the salt, mix and set aside for 15 minutes.
  3. Add sugar, vinegar and dill and toss.
  4. Serve right away.
