
Gingerbread Pancakes
I think I should call Low Fat Gingerbread Pancakes, Lyla’s pancakes. Lyla, my 8-year-old daughter, just adores these. She can even make the batter and flip the pancakes on her own now. We have eaten these all year long, since I first saw a recipe on EA Stewart’s blog. I knew I would love them. I discovered a serious love of all things gingerbread a few years ago. What I was shocked about, was how much my daughter loved them. She has a very sophisticated pallet already,but still I didn’t know she would adore these. She will happily eat raw quail eggs at sushi, caviar, foie gras, tofu, dal and so much more. Of course, all of that is subject to change at a moment’s notice. I always hated molasses as a kid, so I just presumed she would too. Wrong! The key is to add enough molasses to flavor the pancakes without overpowering them.
