
Zucchini is a late summer vegetable that seems to come in droves from my garden. There are hundreds of different recipes for cooking these healthy treats, but one of my favorites is this sautéed zucchini recipe.
Ok, I know it’s not summer right now, but zucchini is one of the few produce that you can usually get fresh year round. For this recipe, we are teaming up with Spiceé Gourmet to show off how good this gourd can be. I’ll tell you a little secret about zucchini. They all taste the same. I don’t care how many gardeners you talk to. I’ve grown them for over 20 years and that’s my experience. There are two things that make a decent sauteed zucchini recipe a great one. First, cooking it to the right amount and second, using a great seasoning. I suggest a high heat to brown the outside of the zucchini as quickly as possible while leaving the middle more al dente. This, with Spiceé Tuscan Spice Blend will get you great zucchini every time.
Ingredients:
- Zucchini
- A few dabs of Butter (1 tbsp per average sized zucchini)
- Tuscan Spice Blend
Directions:
Using a mandolin or a sharp knife, cut the zucchini into small slices.
Put the butter and sliced zucchini into a frying pan. It’s ok if it layers, you will be sauteeing it. Season with Spiceé Gourmet’s Tuscan Spice Blend
Cook to desired doneness. I highly suggest cooking it slightly less than you think it needs. I only cook them until the larger pieces just become hot. With a hot frying pan, this will brown them on the outside.
Serve and enjoy!
