Smoked Salmon lettuce Rolls with sun-dried tomatoes and cucumber
Today I’d like to present you with this light and extremely fresh recipe, ideal for those who must get back into shape in time for the Summer season. This dish is a good pick if you’re interested into something quickly and easy to cooke, that helps you keep your diet healthy and balance with the right mix of vegetables and meat.
Prep Time: 5 min.
Portion: 1 person.
3 heads of Roman lettuce. Please, carefully pull off the leaves – this is important because you do not want to break them, you would need them to make the rolls.
1 tablespoon of fat free vegetable cream.
1/4 teaspoon of lemon. Now add a dash of pepper. I highly recommend you to do not add salt!
60 grams of smoked salmon.
1/4 cup of finely chopped red onion.
1 small cucumber. Remove the seeds and then cut it into slices.
2 tablespoons of sun-dried tomatoes. The ones I use are from the Italian Brand Polti. You should find them easily in your supermarket too. Please, remember to drain the olive oil otherwise you would compromise the tightness of the lettuce rolls.
Once you have drained the olive oil the tomatoes, go ahead and cut them finely.
