Cuban Chicken Parmesan
I love pasta! It’s a recipe staple that goes with so many dishes, and not just Italian meals. As a Cuban-American I grew up with many amazing recipes, one of my absolute favorites is our version of Chicken Parmesan, “Pollo a la Milanesa”. While this is a dish that is common among all of Latin America, Cubans usually add ham and serve it over rice, along with other tropical go-to side dishes like fried plantains. I decided to give it an American twist by making it over angel hair pasta, and oh em geesh, did I score big! It is definitely good enough to rival my Grandma’s, and my all-American husband gave it the seal of approval, with both cheeks full.
