Chipotle Cornmeal Waffle Tostadas with Chicken & Lime Crema
These waffles are so yummy…crispy from the cornmeal, smoky from the chipotle and adobo sauce, and when you get a chipotle seed, a little bit spicy.
We topped our crispy chipotle cornmeal waffles with crunchy cabbage and radishes, shredded rotisserie chicken, and avocados.
Then we put a nice, big dollop of lime Greek yogurt ‘crema’. Whatever you do, don’t skip this yogurt topping! The lime, avocado and chipotle flavors are perfect together, and it really doesn’t take much effort to whip up, {it’s just Greek yogurt with lime juice and lime zest}.
