Chili-Lime Chicken & Sweet Potato Skillet, a tasty and healthy dinner that cooks all in one pan!
This is one seriously protein-rich dinner…between the black beans and the chicken breast, there is no way you’re going to be hungry after this!
The skillet is also packed with fresh veggies: sweet potato, bell peppers, and red onion…feel free to substitute whatever you have on hand…this is an easy ‘clean out the fridge’ kind of meal. I’ll bet zucchini and corn would also be tasty in here!
Everything is cooked up in some chicken stock and seasoned with chili powder, cumin, and lime zest. Both Ben and I just couldn’t get enough of these flavors, and the left-overs made for a great lunch the next day!
