Greek Zucchini Salad (low carb & Paleo)
If you have been reading my blog over the past year you probably noticed that I have quite of few Greek or mediterranean recipes. I guess I just like the flavor combination of the olives, peppers and feta as well as the tangy oregano dressing. Well since it is summer time, I thought I’d try to make a Paleo or low carb pasta salad and that meant no pasta noodles. So I decided to used zucchini noodles (zoodles) and it was the perfect substitute (especially since I have a million zucchini from my garden). I remember making something similar last summer and it was a bit soggy so I was surprised that this worked as well as it did. I think it was because last summer I had made angel hair zucchini noodles with my spiralizer and they were too thin. This year I used my Pampered Chef julienne peeler and the noodles came out thicker, like a spaghetti noodle which worked really well.
