Enchilada Stuffed Squash (Paleo & Low Carb)
Last year when we made our annual trip to Shields Herb Farm, I picked up a delicata plant and was SO in love with those squashes because they made the best fries (check out this post if you are interested). This year that was top on my list but alas they didn’t have any. So I bought a sunburst or pattypan squash. I am not up on my various kinds of squashes but thought I’d try it. They are growing like wildfire and I had to come up with something to make out of them. So I thought I’d stuff them with a chicken enchilada mixture and bake with cheese. These little squashes make the best bowls and you can eat the entire thing. It’s a summer squash so the skin is edible. Perfect Paleo or low carb meal for me and my family.Here are a few of the squashes from the prolific plant. Aren’t they lovely? I think it retrospect I would pick them to be about 5 inches in diameter next time. The bigger ones are almost too big and the smaller ones don’t hold enough.
