Zesty Mexican Corn
We love corn on the cob in our family but I never can seem to buy the right amount. Either I don’t buy enough or I have lots of ears leftover. On this particular day I had about 3 ears leftover and decided to spice it up a bit. My sister in law told me she only eats it cut off the cob with a little butter and thyme. I tried it and it was very delicious so I tried to think of other combinations and ended up with this Zesty Mexican Corn.
The corn I used was 1 day old. I would not recommend eating it older than that. Also you can use fresh if you prefer. I just wanted to come up with something I could do with leftover corn. So you start by cutting it off the cob and breaking it up a bit.
