Broccoli and Blue Cheese soup is fantastic when you just need to grab something quick to eat. It’s a healthy alternative to those snacks in the cupboard, and it doesn’t take long to make. You can even freeze any excess soap and warm it up in the microwave at a later date. The recipe on this page should help you to make a tasty meal for yourself or guests at dinner parties. It makes an excellent starter for any meat dishes, and you’ll wonder how you ever managed without it.
- 100g of Stilton or another blue cheese
- 2 heads of broccoli
- 1 chicken stock cube
- 100g of butter
- 1 potato
- 1 leek
- 1 sticks of celery
- 1 onion
- 2 tablespoons of vegetable oil
Firstly, you’ll need to heat a large saucepan and add your vegetable oil. You should then dice your onions and throw them in there too. Cook the mixture on a medium setting until the onions become soft. You can always add some water into the mix if the onions stick or get too dry. Allow the mixture to simmer on your stove for around ten minutes for the best results.
Slice your celery and leek before dicing your potato and adding it to the saucepan. You should stir the ingredients until they begin to melt. At that time, cover the pot with the lid to enable them to sweat. That process should take no longer than around six minutes in most instances. Check some of the celery to see how soft it has become before moving onto the next step.
Crumble your chicken stock cube into the saucepan and notice the difference in color and smell. You should then throw any leftover broccoli stalk into the mix. Turn the power up slightly and wait for around fifteen minutes until the vegetables become mushy and soft.
Add the rest of your broccoli to the mix and allow the soup to simmer. Once the food is cooked, you can throw it into a blender to remove and chunks and lumps. Crumble your blue cheese into the mix and season with your favorite peppers and spices.
If you follow that method carefully, you should create a delicious broccoli and blue cheese soup everyone will love. Just make sure you take the time to source the freshest ingredients possible. Don’t make the mistake of using frozen veg because it will taste terrible. Search online for produce companies that specialize in high-quality food if you get stuck. With a bit of luck, you will find plants and vegetables that taste better than anything you’ve ever bought from the supermarket.
