Overnight Coconut Milk Oats
Overnight oats are great as you can prepare them the night before and even have it on the go if needed.
I’m on a coconut milk kick now. Or to be fair, I’m always on a coconut kick. So lately I’ve been having overnight oats made with coconut milk for breakfast with raspberries and pomegranates.
Compared to it’s cooked counterpart, the overnight version is creamier and taste a little bit more… indulgent.
Other than tasting amazing, it is also good for you! Oats are as I’ve mentioned before full of goodness! They contain a special kind of soluble fibre called beta-glucans, which can lower cholesterol and stabilise your blood sugar levels, as well as being a good source with vitamins and minerals.
