Chicken Fig Saltimbocca
This Chicken Fig Saltimbocca Recipe is easy enough to make on a weeknight but special enough for company. Perfectly balanced with savory prosciutto, herbaceous sage, fresh sliced figs and a sweet balsamic fig sauce. Low-Carb, Gluten-Free, Paleo friendly.
10 fresh ripe figs (I used Black Mission figs.)
¼ cup good quality balsamic vinegar (I prefer an aged variety.)
4 boneless skinless chicken breasts
25-30 fresh sage leaves
3 ounces thinly-sliced Prosciutto
2 tablespoons olive oil
