Lemony Feta & Carrot Salad
This lemony feta & carrot salad is a light and tasty side dish that you can make in minutes. Bright lemon, tangy feta and sweet carrots compliment each other in this easy salad.
Every time I go to Trader Joes I have to buy their multi-colored carrots. I seem to be the only one in my family that thinks they are cool (I guess I am a bit strange in that way ). Anyway I was trying to figure out what to do with them and was in the mood for a good salad. I also had a bag of lemons that needed to be put to use, so I made this lemony feta & carrot salad. I spiralized the carrots and tossed them with some tangy feta and crunchy toasted pine nuts and dressed them in a bright lemon and garlic dressing. It was delicious! I ate almost the whole thing for dinner!
