Cheesecake recipes are some of my favorite desserts. I love to combine cream cheese in just about any baked goods. I love the creaminess of it and the decadence that it gives to the recipe. These Lemon Cheesecake Bars have a fun animal cracker crust and they taste just amazing.
Did you know that April 18 is National Animal Cracker day? What could be more fun that making a tangy lemon cheesecake bar recipe with crushed animal crackers for a base. They compliment the flavor nicely and the kids will be amazed to know their favorite snack is hiding in the dessert.
