Spaghetti is one of the foods that best remind me of my childhood. Back in the day, my mom would serve us spaghetti during special occasions. Up to this day, I consider it as one of my favorite foods.

What is spaghetti?

Spaghetti is a staple food of Italian cuisine. It is made of milled wheat and water, just like other pasta. The name comes from the Italian word spaghetto, from the root word spago meaning “twine.”

There have been many theories about how spaghetti was invented. One story was that it was the famous explorer, Marco Polo, who brought it to Europe in the 13th century after encountering Asian noodles in one of his trips to China.

But this has been debunked by a book written by an Arabian named Abu Abdullah Mohammed al Idrisi. The book titled “The Book of Roger”  described 12th century Sicily, and mentioned how a pasta-like food product was being manufactured in the town of Trabia.

The book further mentioned how large quantities of spaghetti were being exported outside of the Italian town. This suggests that spaghetti was already being enjoyed in the different parts of Italy even before Marco Polo supposedly brought the recipe back with him to Venice.

As you may likely know, there are different spaghetti recipes. There’s spaghetti carbonara which features bacon and egg. It’s great for brunch and even dinner. It’s also a kid’s favorite. There’s also the classic Sicilian spaghetti which contains sausage and ground beef.

And I’m in love with basil tomato sauce spaghetti, a recipe that I will share with you here.

Why do people love spaghetti?

I’ve been asked this question several times in the past. What is it with spaghetti, and pasta in general, that makes it one of the most popular foods around the world? One reason I can think of is that eating pasta can make me feel full very quickly.

Due to its starch content, pasta is digested slowly. This results in a prolonged feeling of satiety. As my personal experience, I only need to eat a plate of spaghetti for lunch and I’m basically set and recharged for the rest of the afternoon.

Spaghetti is also considered a healthy meal.  A low glycemic food, it helps in controlling blood sugar levels. It can also aid overweight people to manage their weight, which was proven by a study conducted by researchers from the Neuromed Institute.

For me, I love spaghetti because it is delicious. I have enjoyed this food ever since I was a kid. I’ve associated it with special occasions like birthdays and holidays. As a chef, I like cooking spaghetti because it is easy to prepare. Spaghetti sauce can be made from simple ingredients. And you can make lots of different dishes with it.

The recipe I’m sharing with you is basil tomato sauce pasta. It’s easy to prepare that you should have this dish ready for serving in less than an hour. This recipe is good for six servings.

Ingredients:

  • Three-fourths pound of fettuccine or linguini pasta
  • 2 medium trimmed chicken breasts
  • Six tomatoes, diced
  • 2 tablespoon of olive oil
  • Salt and black pepper
  • Quarter cup of green onions, chopped
  • Half cup of heavy whipping cream
  • One clove of garlic
  • Quarter cup of hot chili flakes
  • 1-2 tablespoon of fresh basil
  • Parmesan cheese
  • 4 tablespoon of unsalted butter

Instruction:

1. Start by cutting the chicken breasts into small pieces and chopping the other ingredients.

2. Season the chicken with salt and pepper.

3. Get a large, deep pan. Put 2 tablespoons of olive oil on it and place it over medium heat.

4. Add the tomatoes, green onions, chopped basil, butter, and pressed garlic clove. Season with black pepper.

Tip: You can also add the chili flakes but I suggest that you skip this part if you are to serve the spaghetti to kids – – they might find it too hot and not like it at all. 

5. Stir in half a cup of heavy cream and half a teaspoon of salt once there’s only a quarter of liquid remaining in the pan.

6. Cook the pasta in salted water with a tablespoon of olive oil until the pasta is firm to the bite. Rinse and drain before setting it aside.

7. Season to taste before you toss the pasta with the sauce. Add parmesan or chopped fresh parsley for extra freshness. Serve with iced tea or watermelon juice and you have a very filling lunch or dinner.
