Simple Chicken Quesadilla
This Simple Chicken Quesadilla recipe is the perfect way to use up leftover chicken and make a flavorful, quick dinner. Quesadillas are a go to meal in my house. I mean, in all honesty, we have some kind of quesadilla at least once a week.
My kids have even brought them to school for lunch! That means I always have burrito wraps on hand to stuff with whatever else I have on hand. Quesadillas really are the best way to use leftovers! I’ve stuffed them with everything from ground beef, to leftover pot roast, even pork! Today, it was leftover chicken I needed to use up.
