I made this a few nights ago. Excellent summertime recipe.
Original Recipe Yield: 6 skewers
- 1.5 lbs Uncooked Shrimp
- 1 package Bacon
- 1 cup Pineapple Juice
- 1 Shallot diced
- 1/4 cup Sugar
- 1 Lemon, squeezed and zested.
Prepare marinade by mixing pineapple juice, shallot, sugar, lemon juice and 1/2 of the zest.
Place thawed shrimp in marinade and let rest at least two hours.
Par bake bacon so that juices begin to flow but not cooked.
Skewer bacon by piercing the end of the bacon, then
add one shrimp. Wrap the bacon around the outside of the shrimp and
pierce again back onto the skewer from the opposite direction. Flip over and reverse until the skewer is
full. The bacon should make a series of continuing “s” shapes around the
shrimp. Sprinkle the second half of the lemon zest onto the skewers.
Grill on high until shrimp is pink and bacon is cooked; turn occasionally.
