Mix the fresh jalapeno popper ingredients in a bowl.
Fry the bacon in a pan until crispy and chop. Then take half of a cup of softened cream cheese, sliced green olives, and one quarter cup of shredded cheddar cheese. Mix in a medium bowl.
Now, it is time to stuff the Jalapeno’s. If you are making them in the first way so they are not cut in half, make sure to stick a toothpick through the bottom of each jalapeno so that any juices can drain out. Otherwise, you will end up with soggy poppers.
If they are cut in half, just plop the filling inside like this:
I stuff my poppers by hand as it works better than any tools I have tried. Stuff the peppers until they are totally full. I heap the top over because it seems to shrink 10% or so when cooking.
Make sure to top with cheese.
Bake at 275 for 45 minutes to an hour. The longer you cook this, the less spicy they will be.
