Stuffed Zucchini

This is the best stuffed zucchini recipe around. There are a lot of good recipes, but this is the one that I do every time I make stuffed zucchini.

It seems that every northern gardener has a ton of zucchini this time of year. It is a blessing when they first produce, but then it seems that it takes more and more creativity to make something you really want to eat as the season progresses.


This is a great way to add some variety to your zucchini-feasting of the end of summer:

In this simple recipe, you will need the following:

  • 1 tbsp Butter
  • 2 tbsp olive oil
  • 1 small onion
  • 1 spoonful of non-flavored yogurt
  • 1 tomato, or several cherry tomatoes (for color as well as taste), diced
  • 2 zucchini
  • 4 tbsp Parmesan cheese, grated
  • 1 tbsp basil, diced
  • Parsley for garnishements diced
  • salt to taste
  • pepper to taste

Start by slicing the zucchini in half and coring our the middle like this:
