It seems that every northern gardener has a ton of zucchini this time of year. It is a blessing when they first produce, but then it seems that it takes more and more creativity to make something you really want to eat as the season progresses.

In this simple recipe, you will need the following:
- 1 tbsp Butter
- 2 tbsp olive oil
- 1 small onion
- 1 spoonful of non-flavored yogurt
- 1 tomato, or several cherry tomatoes (for color as well as taste), diced
- 2 zucchini
- 4 tbsp Parmesan cheese, grated
- 1 tbsp basil, diced
- Parsley for garnishements diced
- salt to taste
- pepper to taste
