
This is the first time I have ever made Huevos Rancheros and it turned out really well! So, I’m going to add this to the it “looks fancy but anyone can make it” list.
I had some leftovers I wanted to use up including a baked potato and an avocado and a ton of veggies from the garden including cilantro, bell peppers, green onion, chives, and tomato. So I designed this breakfast around those ingredients.
Here’s what you need to make these Huevos Rancheros:
- 4 of the 4 inch tortillas
- Black Beans
- Chipotle spice
- Cilantro
- Tomato
- Bell Peppers
- Hot Pepper
- Green Onion
- Avocado
- 2 Eggs
