Tailgating Food Recipes

This weeks offerings are a little change of pace. The first recipe comes from Southern Living. This a very popular side dish, Cranberry-Almond Coleslaw. When we made this recipe we did cut back a little on the oil so the cabbage would not get too soggy. Otherwise this coleslaw had great flavor and texture. You can always add your personal favorites like raisins to customize this recipe. It took a little longer to prepare than we thought it would but the result was well worth the effort.

Next up is a southwest favorite, Chicken Enchiladas. This recipe is easy and quick. It is sure to be a hit at your tailgating get together. What we like about it is that you can easily substitute beef, pork or whatever. It you can add a little zing to this one simple by adding jalapenos or  sauce of your choice.

If you want a different and tasty tailgating treat, we suggest you try Tortellini Caprese Bites. Simple but full of flavor we really like this one.
