Sandwich Notes


This is a fun little grilled cheese. Make sure you add an extra glass or two of wine for yourself to drink after you are done cooking the sandwich. You will have to start by making a red wine reduction. Any wine reduction will do so if you have one that you like, go ahead and make it. Otherwise, this is an easy reduction to make:

Ingredients

  • 1 1/2 cup red wine
  • 2 tbsp butter
  • 1-2 tbsp diced shallots
  • pinch of beef bouillon
  • gruyere cheese
  • bread of your choice

Directions

1. Pour 1 1/2 cup red wine in a pan and begin to simmer it. Add 2 tbsp butter, one tbsp of diced shallots, and a pinch of beef bouillon. Simmer and stir until reduced to half of the volume.

2. Pour a small amount of reduction inside the sandwich above and below a layer of gruyere cheese. If you don’t have gruyere, you can use any hard white cheese.

3. When the sandwich is golden brown on both sides, drizzle some of the reduction on top and serve hot with a glass of your favorite red wine! My wife says it tastes just like “book” club.
