
This week was a fun week of cooking. We had a theme of using cabbage! My own lack of of great cabbage recipes gave me the chance to do some research and make up a few of my own. The following two meals were my two favorite corned beef and cabbage recipes.
The first thing we did was to cook a corned beef roast and make a side of greek potatoes. When these were done, we were able to put together a couple of fun sandwiches.
First, we purchased a roast from a local grocery store.
Then, we made greek potatoes from this recipe at Spiceé Gourmet. You can get the whole recipe here.
With these two ingredients made, it was time to make our corned beef and cabbage recipes.
The first one was a wrap using a red cabbage leaf. You can see the step by step printable directions Here.
You will need:
- Red Cabbage
- Greek Potatoes
- Corned Beef
- Swiss Cheese
- Thousand Island Dressing.
On a baking sheet, lay a large leaf of the red cabbage so it makes a bowl. Then fill it with some of your greek potatoes.
Then add the corned beef.
Now, lay strips of the swiss cheese on top.
Put under a broiler until the cheese is melted and serve with a side of thousand island dressing.
The second recipe is for a variation of a reuben. Rather than shredded corned beef and sauerkraut, this is a sliced corn beef and cabbage recipe.
Ingredients
- Corned Beef Roast
- Red Cabbage
- Swiss Cheese
- Pumpernickel Bread
- Thousand Island Dressing
Directions:
Toast the bread. Then add slices of the corned beef and cheese to one slice. Cover with swiss cheese and broil until the cheese is melted.
Then rather than using sauerkraut, put some fresh shredded cabbage on top of the cheese and top with thousand island dressing.
