Slow Cooker Lentil Recipe and It’s Healthy!

I can always tell when tailgating season is upon us because I can set a clock to when my wife pulls out the crock pot. In the fall the days shorten and the weather begins to cool. It is my favorite time of year and it’s time to dust off your crock pot or slow cooker recipes. There is nothing like coming in from chilly weather to a house that is full of the smell of good food to eat! Yesterday, my wife came up with this awesome slow cooker lentil recipe. It was so simple and used things we already had in the house. Plus, we took some of the tomatoes we grew in the straw bale garden. You can read about that series here.  This amazing lentil soup is full of healthy ingredients too! My 9 year old daughter loved it, but she was too stubborn to admit it.

The great thing about crock pots, is that you can set them in the morning, and come back to a dinner that is ready for you when you get home. It’s like cooking for dummies. So it is perfect for me.


To make this Slow Cooker Lentil recipe, you will need:

Simply combine all the ingredients in the crock pot and cook on medium. It will be done in just a few short hours or through the day.

We use SpiceeGourmet.com for as many of the spices as possible. They are a blogger created line of seasonings and rubs. Their motto is “Saving the world from boring meals … one good rub at a time.” Today, we used their Tuscan blend.
