This post turned out to be a really fun one to cook! Our healthy chicken breast crock pot recipe combined, healthy food, crock pots, Spiceé Gourmet, and essential oils to feed the family! For two nights in a row, we have had to call on Grandma and Grandpa to save the day. Two boys are in hockey, one girl is in traveling soccer, and the youngest just started dance. Throwing in a PTA meeting and a coaches meeting meant that we were one kid driver short even after setting up car pooling. Luckily, we have some healthy chicken recipes that are perfect for a crockpot. Hey, sometimes you just need every bit of help you can get.

This recipe also used fresh from the garden tomatoes and Swiss chard. Check out our straw bale garden series here.
There are four parts to this meal. The healthy crock pot chicken, the swiss chard, the fresh tomato and the rice. Let’s start with the chicken.

Healthy Chicken Breast Crock Pot Recipe
The chicken is very simple to make. Place 1/2 cup water in the bottom of a crock pot. Then, place raw chicken breasts in the crock pot. Sprinkle with SpiceeGourmet.com Tuscan Blend.
We also added a few drops of Tangerine essential oils as well. This really helped tenderize the chicken and added an awesome zesty flavor to it.
Cook on medium for 4-6 hours. The chicken will be fall apart tender.
Rice
It is very easy to fancy up a simple white rice. Try using an essential oil for flavor or use a dollop of coconut oil in your rice cooker to add a coconut flavor.
Swiss Chard
The chard came right out of our straw bale garden. Nothing beats fresh greens! We sautéed the chard in a small amount of butter and water and heated it just to the point where it softened.
The Swiss chard and fresh tomato add a nice color to an otherwise white and brown meal. Serve on single plates for a lovely looking, fresh tasting, and fall apart tender healthy dinner.
