I love creamy soups. My husband, not so much. But this one was for me because I was craving a creamy mushroom type soup. And since I always have cut up rotisserie chicken in the freezer and some baby spinach on hand, this is what I came up with. I also decide A healthy, creamy soup using a cauliflower cream sauce. I loved the cauliflower cream sauce in my Chicken Pot Pie Soup so I thought it would be good in this recipe as well. The result was a delicious and nourishing soup that was hearty enough for a meal.
