Not that long ago, I had a basil plant that needed to be used up and I made the best damn pesto I’ve ever enjoyed. You see, I didn’t have pine nuts or parmesan on hand which are the ingredients intraditional pesto, but I made due with what I had and used an aged gouda and macadamia nuts. Oh my God. I was content eating that stuff with a spoon!
