Spicy Apricot Pistachio Cookies
Spicy apricot pistachio cookies are easy to make and have a delightfully unique flavor. These cookies feature sweet apricots, spicy chiles and crunchy pistachios for a great taste.
I made this recipe a few weeks ago for a Sunday Supper theme of spicy and sweet. I ended up making my Spicy Apricot Chicken Meatballs instead, but originally I wanted to use apricot and pistachios because it reminds me of my dad. He was Lebanese and this combination just seems like something he would have loved. Actually if I had added some cheese I think I would have hit his trifecta (cheese, nuts and fruits). Anyway, these came out really good. My mother in law ate a few everytime she came into the kitchen and they were gone in one night.
