Salmon is definitely a favorite around here! Most of the time, I will simply poach fresh salmon which is delicious on its own or on top of a nice, fresh salad. This recipe, though, is a remake of the salmon patties my mom used to make. I still love those basic salmon patties with just salmon and egg! Adding just a bit of fresh herbs just enhances the flavor a bit. You can go all out and start by cooking a pound of fresh salmon for this recipe. But I prefer to take a short cut and go the semi-homemade route.
