Smoking a Turkey Breast

This recipe calls for brining. So we brined the breasts overnight in an apple cider and then smoked it for half a day on our Traeger Grill. Learn exactly what we did below.

  • 1 bottle apple cider
  • 3/4 cup kosher salt
  • 3/4 cup sugar
  • 1/3 cup apple cider vinegar
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • a handful of fresh sage leaves
  • 1 garlic bulb cut open
  • 4 cups ice cubes
  • 2 turkey breasts

Bring the cider, all herbs, salt, sugar, and cider vinegar to a boil in a large pot. Stirring occasionally. It smells really nice and your whole house will smell like thanksgiving.

Once boiling, remove from heat and cool with the ice cubes. You don’t want to cook your turkey like this!  When the brine is cool, put your turkey in and let it sit overnight.

The next day, pull the turkey out and pat it dry with paper towels. Smoke at 225 until the internal temperature reaches 165; about 4 to 5 hours.

When finished, let it sit for 10 minutes before slicing.
