
It’s tailgating season and it seems like everyone is looking for fun appetizer and mixed drink recipes. Let’s face it, there is only so much beer I can handle watching football. So, today, we made a very simple and fresh raspberry mojito to change things up a bit. All you need is some fresh raspberries, lime, tonic, mint, and your choice of rum.
Ingredients:
Raspberry Puree
- 1/2 cup raspberries
- 3/4 cup sugar
- 1 1/2 cup water
- pinch of salt
Raspberry Mojito
- raspberry puree
- lime
- mint
- rum
- tonic
Directions:
Start by picking some of your fresh raspberries from your garden, or get some from you local store. You will need to make a puree. Combine the 1/2 cup raspberries, 3/4 cup sugar, 1 1/2 water, with a pinch of salt. Bring to a boil until it thickens. You can run it through a food mill or strain to get rid of the seeds if you like.
In a tumbler, add a slice of lime and mint. Muddle to release the flavor.
Add the raspberry puree, rum, and tonic in roughly equal parts over ice. You can adjust the quantities for you own tastes. Enjoy!
