Easy Homemade Tomato Sauce

This sauce is super simple to make and if you make a big batch by doubling (or even tripling) the recipe, it can be frozen to have on hand when you need it. I do this for dishes like Vegetarian Lasagna and Eggplant Parmesan to give myself less work on the day. I use a food processor to chop the vegetables (chopping them quite fine). The smaller they are chopped, the quicker the sauce will cook. If you are chopping by hand, it may take a bit longer to cook.
