Homemade Ginger Ale From Scratch

Reduce the solution until it thickens a little. It should be a little thicker than water, but more liquid than a syrup you would use on pancakes. The more you reduce it down, the more concentrated the simple syrup will be in the end. When we made this we let the ginger and peppercorn sit in the water for about 45 minutes on low heat stirring occasionally.

Finally, strain out the peppercorn and ginger and pour the syrup into a container. We store our simple syrup in mason jars in the fridge for up to a month. This lets us make fresh ginger ale whenever we want it.
